Cheesy Baked Zucchini Tots Recipe

You can make Cheesy Baked Zucchini Tots instead of potatoes instead. They are a family favorite and are great for dipping and dunking.

INGREDIENTS

– 2 medium zucchini – 1/3 cup small diced onion – 1/4 cup finely ground breadcrumb – 2 large egg – 1/3 cup shredded cheddar cheese

INSTRUCTIONS

Warm the oven up to 400°F and use cooking spray to coat a mini muffin pan.

Step 1

Shred zucchini with a box grater's large hole, then squeeze out as much liquid as possible on a kitchen towel or sieve. 

Step 2

Stir the drained zucchini, diced onion, breadcrumbs, egg, cheddar cheese, ¼ teaspoon salt, and ¼ teaspoon pepper in a medium bowl until mixed.

Step 3

Put equal amounts of the mix into each of the 24 muffin pan cups.  Tots should be baked for 15 to 18 minutes, or until they turn golden brown.

Step 4

 Take them out of the oven and let them cool in the pan for 10 minutes. Then take them out and serve them with ketchup or Ranch to dip.
