Chocolate Chip Brownie Cookies have chewy, fudgy centers and slightly crispy ends. This is the best recipe for these two popular desserts.
INGREDIENTS
– 3 ounces unsweetened chocolate, chopped– 2 cups semisweet chocolate chips, divided– 8 tablespoons unsalted butter, cubed– 3 large egg– 1 cup sugar– 2 teaspoons instant coffee granule– 3/4 cup all-purpose flour– 1/3 teaspoon baking powder– 1/4 teaspoon salt
INSTRUCTIONS
Pre-heat the oven to 350ºF. Stir unsweetened chocolate, 1 cup chocolate chips, and butter in a double boiler until melted. Remove the chocolate pan from the double boiler and set aside.
Step 1
Whisk the eggs, sugar, and instant coffee granules in a stand mixer bowl with the whisk attachment on high speed for 3 minutes until very thick and ribbon-like.
Step 2
Add the chocolate mixture slowly to the bowl and whisk until incorporated.
Stop the stand mixer. Stir the flour, baking powder, and salt into the bowl until mixed.
Step 3
Mix in the remaining 1 cup chocolate chips. Place heaping spoonful of batter 2 inches apart on a parchment- or Silpat-lined baking sheet.
Step 4
The cookies should be cracked and puffy after 10–12 minutes. After baking, let the cookies rest on the baking sheet for 1 minute before moving them to a cooling rack.
