Warm the oven up to 350°F. Put foil around the edges of an 8-inch square baking pan and grease it with cooking spray.

Mix crumbled graham crackers and melted butter in a medium bowl. Press the mixture into the pan to make an equal coating.

Beat cream cheese, sugar, lemon zest, lemon juice, and vanilla extract in a stand mixer bowl using the paddle attachment until well blended.

One at a time, add the eggs and beat well after each one. Then, pour the cheesecake filling on top of the crust and spread it out evenly.

It should be baked for twenty to twenty-five minutes, or until the middle is almost set.

After taking the cheesecake out of the oven, let it cool fully. Then, put plastic wrap around the pan and put the cheesecake in the fridge for 3 hours.

Take the cheesecake out of the fridge, cut it into bars, and serve.
