Greek Pasta Salad With Red Wine Vinaigrette Recipe

Before you buy a deli pasta salad, make this Greek pasta salad with red wine vinaigrette instead. It's a crowd favorite.


FOR THE PASTA SALAD: – 2 1/2 cups uncooked pasta, such as penne or rotini – 2/3 cup sliced red onion – 15 cherry tomatoes, halved – 1 cup diced cucumber – 3/4 cup sliced olive – 3/4 cup diced green pepper – 1 cup crumbled feta cheese FOR THE VINAIGRETTE: – 1/3 cup red wine vinegar – 2 teaspoons freshly squeezed lemon juice – 1 1/2 teaspoons minced garlic – 1 teaspoon sugar – 2 teaspoons dried oregano – 1/2 cup extra-virgin olive oil


MAKE THE PASTA SALAD:- Bring a large saucepan of salted water to boil. Cook pasta till al dente. Cool the pasta in a wide bowl after straining. While spaghetti cools, create dressing.

MAKE THE DRESSING:-Whisk all dressing ingredients except olive oil in a small bowl. Add olive oil while whisking. Salt and pepper the dressing to taste.

Add red onions, tomatoes, cucumbers, olives, green peppers, and feta cheese to the spaghetti bowl.

Step 3

After combining the pasta with the dressing, cover the salad with plastic wrap and chill for at least 3 hours or overnight. Toss pasta salad again before serving cold or room temperature.
