Greek Pasta Salad With Red Wine Vinaigrette Recipe
Before you buy a deli pasta salad, make this Greek pasta salad with red wine vinaigrette instead. It's a crowd favorite.
INGREDIENTS
FOR THE PASTA SALAD:– 2 1/2 cups uncooked pasta, such as penne or rotini– 2/3 cup sliced red onion– 15 cherry tomatoes, halved– 1 cup diced cucumber– 3/4 cup sliced olive– 3/4 cup diced green pepper– 1 cup crumbled feta cheeseFOR THE VINAIGRETTE:– 1/3 cup red wine vinegar– 2 teaspoons freshly squeezed lemon juice– 1 1/2 teaspoons minced garlic– 1 teaspoon sugar– 2 teaspoons dried oregano– 1/2 cup extra-virgin olive oil
INSTRUCTIONS
MAKE THE PASTA SALAD:- Bring a large saucepan of salted water to boil. Cook pasta till al dente. Cool the pasta in a wide bowl after straining. While spaghetti cools, create dressing.
Step 1
MAKE THE DRESSING:-Whisk all dressing ingredients except olive oil in a small bowl. Add olive oil while whisking. Salt and pepper the dressing to taste.
Step 2
Add red onions, tomatoes, cucumbers, olives, green peppers, and feta cheese to the spaghetti bowl.
Step 3
After combining the pasta with the dressing, cover the salad with plastic wrap and chill for at least 3 hours or overnight. Toss pasta salad again before serving cold or room temperature.
