These Mini Chocolate Chip Doughnut Muffins are simple to make and even simpler to eat! It's impossible to say no to soft muffins with chocolate chips and cinnamon!

FOR THE MUFFINS: – 1 cup (120g) all-purpose flour – 1/2 cup (100g) granulated sugar – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup (113g) sour cream – 1/4 cup (56g) unsalted butter, melted and slightly cooled – 1 large egg, lightly beaten – 1 teaspoon vanilla extract – 3/4 cup (133g) mini semisweet chocolate chip FOR THE COATING: – 1/2 cup (113g) unsalted butter, melted – 3/4 cup (150g) granulated sugar – 1 & 1/2 teaspoons ground cinnamon

Mini Chocolate Chip Doughnut Muffins Recipe

MAKE MUFFINS: Preheat oven to 350°F. Grease 24-cup mini muffin pan.

Step 1

Mix flour, sugar, baking soda, and salt in a large bowl. Make a well in the mixture. Set aside.

Mix sour cream, chilled butter, egg, and vanilla. Add to flour mixture thoroughly. Mix briefly. (Thick batter).

Mix in chocolate chips. Each muffin cup should have around a tablespoon of batter. I use 50 scoop.

Bake 10-12 minutes until muffins are golden brown and spring back when touched.

Let muffins cool in pan for 5 minutes. Transfer the muffins to a wire rack to finish cooling.

The coating is made by placing melted butter in a small bowl. In another bowl, mix sugar and cinnamon.

Roll a cooled muffin in cinnamon-sugar after dipping in butter. Transfer to parchment or wax paper or a serving platter. Repeat with remaining muffins.
