Pepperoni Pizza Pull-apart Bread Recipe

FOR THE DOUGH: – 2 3/4 cups all-purpose flour, divided – 2 teaspoons sugar – 1 teaspoon salt – 2 1/4 teaspoons instant yeast (1 envelope) – 1/3 cup whole milk – 6 Tablespoons unsalted butter – 1/4 cup water – 2 large eggs, at room temperature FOR THE TOPPINGS: – 1/2 cup pizza or marinara sauce – 1 cup shredded mozzarella cheese – 1/4 cup sliced pepperoni – 2 Tablespoons unsalted butter, melted – 2 cloves garlic, minced


Mix 2 cups flour, sugar, salt, and yeast in a stand mixer. Set aside.Over low heat, melt milk and 6 tablespoons butter in a small saucepan. Stir water into the saucepan after removing it from heat.

Step 1

 Let it reach 120-130ºF. Mix the milk mixture with the dry ingredients with a spatula.

Step 2

Use the dough hook to knead the dough for 3 minutes on low speed in your stand mixer. Knead between egg additions to properly incorporate them.

Step 3

After turning off the mixer, add ½ cup of remaining flour and knead on low speed for 2 minutes until smooth. Add 3 tablespoons flour and knead until soft and sticky.

Step 4

After lightly flouring your work area, place the dough and knead it 5–6 times until it forms a ball. Lightly oil a large bowl. Wrap plastic around the dough in the basin. After one hour of warm, dry proofing, the dough should double.

Step 5

Rest the dough on a gently floured surface after deflating. Form a 20x11-inch rectangle. Cover dough with sauce, cheese, and pepperoni. Trim edges and remove leftovers for straight rectangle sides.

Step 6

Divide the rectangle into 5 wide pieces. For 20 squares, stack and cut the strips into four equal pieces. 

Step 7

Slightly oil a 9x5 loaf pan. Put cut-side-down squares together. Extra space will be added both sides. Cover the pan lightly with plastic wrap and proof for 30 minutes until doubled. Preheat oven to 350FºF.

Step 8

Combine melted butter and minced garlic. On a baking sheet, bake the loaf pan for 15 minutes.

Step 9

After smearing garlic butter on the bread, bake for 15–20 minutes until golden brown. After 10 minutes, remove the bread from the pan onto a dish.
