Rainbow Cupcakes With Buttercream Frosting Recipe

Two words: rainbow cupcakes. The festive hues may have attracted your eye, but the sugar cookie-esque taste will definitely hook you. Sugar cookie-flavored cupcakes? Yes, indeed!

INGREDIENTS

FOR THE CUPCAKES: – 3 cups all-purpose flour – 2 1/2 teaspoons baking powder – 1/2 teaspoon salt – 1 cup (2 sticks) unsalted butter, softened – 1 3/4 cups sugar – 2 large egg – 1 1/2 teaspoons vanilla extract – 1 1/2 cups whole milk – Food coloring (red, orange, yellow, green, blue and purple) – Rainbow sprinkle FOR THE FROSTING: – 1 cup (2 sticks) unsalted butter, softened – 2 teaspoons vanilla extract – 2 Tablespoons heavy cream – 3 cups powdered sugar, sifted – Equipment: Cupcake wrapper

INSTRUCTIONS

MAKE THE CUPCAKES:- Warm the oven up to 350°F. Put cupcake covers inside the tins. Sift the flour, baking powder, and salt together in a medium-sized bowl.

Step 1

Cream butter and sugar in a stand mixer using the paddle attachment until frothy. stir between adding the eggs, then add the vanilla and stir till incorporated.

Step 2

In three increments, add flour mixture and milk to the stand mixer, commencing and ending with flour. Color the batter in six bowls with red, orange, yellow, green, blue, and purple food coloring.

Step 3

Sprinkle purple batter in each cupcake cup, then blue, green, yellow, orange, and red without mixing.

Step 4

 Each color can be piped into cups from sealable plastic bags. Bake cupcakes until a toothpick comes out clean, 15–18 minutes. Leave the cupcakes on a rack to cool while you make the icing.

Step 5

MAKE THE FROSTING:- Cream butter in a stand mixer using the paddle attachment until light and fluffy. Beat in the vanilla extract, then half the powdered sugar.

Step 6

Beat in the heavy cream, then the remaining powdered sugar until the frosting is thick and creamy.

Step 7

After the cupcakes cool, pipe or spread frosting on them, sprinkle with rainbow sprinkles, and serve.
