FOR THE CRUMB TOPPING:* – 3/4 cup (90g) all-purpose flour – 6 tablespoons (75g) firmly packed light brown sugar – 1/8 teaspoon salt – 3 tablespoons (42g) unsalted butter, melted FOR THE MUFFINS: – 2 cups (240g) all-purpose flour – 1 cup (200g) granulated sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup (113g) unsalted butter, melted and slightly cooled – 1/2 cup (113g) sour cream – 2 large egg – 2-3 teaspoons vanilla bean paste or extract

FOR CRUMB TOPPING:  Mix flour, brown sugar, and salt. Mix with melted butter until big crumbs form. Set aside while making muffins.

MAKE MUFFINS: Preheat oven to 375°F. Grease or line 12 regular muffin cups. In a large bowl, mix flour, sugar, baking powder, soda, and salt. Make a well in the mixture.

In another bowl, mix the cooled butter, sour cream, eggs, and vanilla. Add to flour mixture thoroughly. Mix briefly. Do not overmix.

Put 3 tablespoons of batter in each muffin cup. Sprinkle the crumb mixture on the muffins and push it into the batter.

Bake the muffins 20–24 minutes until the tops are golden brown and a pick inserted into the center comes out clean.

Let muffins cool in pan for 10 minutes. Transfer the muffins to a wire rack to finish cooling.
