INGREDIENTS
– 2 1/2 cups all-purpose flour– 1/2 teaspoon salt– 1/4 cup sugar– 2 1/4 teaspoons baking powder– 6 Tablespoons cold unsalted butter, cubed– 2/3 cup heavy cream, plus more for topping– 2 large egg– 2 teaspoons vanilla extract– 1 cup raspberries– 3/4 cup white chocolate chip– Sanding sugar, optional
INSTRUCTIONS
Preheat the oven to 400°F. Line a baking sheet with paper or Silpat.
Step 1
Mix flour, salt, sugar, and baking powder in a medium bowl. Rub diced butter into flour with your fingertips until it resembles wet sand.
Step 2
Mix heavy cream, eggs, and vanilla in a medium bowl. Toss wet and dry ingredients several times. Mix in raspberries and chocolate chips to make a wet dough.
Step 3
Form an 8-inch, 3/4-inch-thick circle of dough on a floured surface. Cut the circle into 8 wedges. Place the scones 2 inches apart on the greased baking sheet and freeze for 20 minutes.
Step 4
Remove frozen scones. Sprinkle sanding sugar on heavy cream-brushed tops. Bake scones till pale golden and cooked through, 20 minutes. Remove from oven and serve now.
