5-ingredient Butternut Squash Fritters Recipe

You can eat more vegetables with this quick and easy recipe for butternut squash fritters. You only need 5 things to make them.

INGREDIENTS

– 5 cups shredded butternut squash, lightly packed (See Kelly’s Note) – 2/3 cup all-purpose flour – 2 large eggs, lightly beaten – 1 1/2 Tablespoons minced fresh sage – Vegetable oil

INSTRUCTIONS

Combine shredded butternut squash, flour, eggs, minced sage, ¼ teaspoon salt, and ⅛ teaspoon pepper in a large bowl. Stir until mixed. Place paper towels on a platter.

Step 1

Coat a large sauté pan with vegetable oil and heat on medium-high. Place 3-tablespoon mounds of the mixture in the pan and lightly flatten them into rounds at least 2 inches apart after heating the oil. 

Step 2

Cook the fritters for 2–3 minutes, flip them, and cook for 2 more minutes until golden brown and cooked through. 

Step 3

Salt the fritters immediately after placing them on the paper towel-lined plate. Repeat scooping and heating the remaining mixture.
