Apple Fennel Chicken Salad Recipe

– 1 1/2lbsboneless and skinless chicken breastraw or pre-cooked – 1cupgranny smith applescut into matchstick – 1/2cupfennelchopped – 1/2cupwalnutsor pecans - roughly chopped – 1/2cupmayonnaise – 1/4cupgreek yogurt – 1teaspoonhoney mustard – 1tablespoonchoppeddill – 1tablespoonfresh parsleyminced – 1teaspoonfresh lemon juice – 3green onionsfinely sliced – 1/4teaspoonsalt – 1/4teaspoonfresh ground pepper

The chicken should be brought to a boil in a large stock pot filled with water if it is uncooked.

After seasoning it with some salt and pepper, add the chicken and poach it until it is completely cooked through or the temperature on the inside hits 165 degrees at the very least.

Take the chicken that has been cooked and place it on a chopping board. Allow it to cool. After it has cooled, cut it into cubes and place it in a large basin.

Place the remaining ingredients in the bowl and mix well.

Use a spatula to thoroughly mix the ingredients. If additional mayonnaise is required, add it, and adjust the salt and pepper to taste.
