Start by preheating the oven to 425ºF and lining a baking sheet with parchment paper
Step 1
In a large saucepan, heat olive oil on medium. Add diced onion and heat until translucent, 3–5 minutes. Stir occasionally as the garlic cooks for 3 minutes until golden and aromatic.
Step 2
Place the skillet on low heat and stir in the lime juice, cumin, paprika, salt, and black pepper. Toss in shredded chicken.
Step 3
Let the chicken mixture cool for 10 minutes in a large bowl before adding the shredded cheese.
Step 4
Spread 3 tablespoons of chicken mixture on the lower third of each tortilla on a work surface. Roll the tortilla tightly, fasten it with a toothpick, and lay it seam-side down on the baking sheet.
Step 5
Fill and roll the remaining tortillas. Bake the taquitos for 15–20 minutes until crispy. Air fryer instructions are below. Serve salsa and guacamole.
