Blueberry Oatmeal Pancakes Recipe

Flourless whole grain protein pancakes create a balanced breakfast! These simple oatmeal pancakes are full and nutritious thanks to slow-burning carbs and protein.

– 2 cups rolled oats – ▢4 Tbsp protein powder of choice, optional* – ▢2 tsp baking powder – ▢1 tsp ground cinnamon, optional – ▢½ tsp sea salt – ▢2 large egg – ▢2 egg whites, ⅓ cup – ▢1 cup milk of choice** – ▢2 Tbsp pure maple syrup*** – ▢1 pint fresh blueberrie

Ingredients

Mix oats into flour in a high-powered blender or processor for 60 seconds.For 10 seconds, mix protein powder, baking powder, cinnamon, and sea salt.

Stir eggs, egg whites, milk, and pure maple syrup in a large bowl.Combine dry and wet ingredients into a homogenous batter.

Stir batter occasionally for 10 minutes.Make pancakes in a large nonstick skillet, frying pan, or pancake griddle over medium heat with your chosen oil.

Heat the skillet for a few minutes. Pour ¼ cup batter onto the hot griddle. As many or few blueberries as you desire on the pancake batter.

Cook the batter for 2–3 minutes until bubbles form on top and the edges firm up. Flip and heat for 1–3 minutes until pancakes are golden brown and cooked through.

Repeat with remaining batter. If the pancakes are cooking too slowly, increase the heat to medium high or lower it.
