FOR THE PASTRIES: – 8 ounces (226g) cream cheese, softened – 1/3 cup (67g) granulated sugar – 1 large egg, separated – 1 teaspoon lemon juice – 1 teaspoon vanilla extract – 1 (17.3 ounce/490g) package puff pastry sheet FOR THE GLAZE: – 3/4 cup (83g) confectioners’ sugar – 1-2 tablespoons milk or heavy cream – 1/4 teaspoon vanilla bean paste or vanilla extract

TO MAKE PASTRIES:  Preheat oven to 400°F. Prepare two baking sheets with parchment or silicone liners. 

Step 1

Beat cream cheese, sugar, egg yolk, lemon juice, and vanilla until smooth using a medium-speed electric mixer.

Step 2

Roll one puff pastry sheet into a 10-inch square. Cutting into 9 squares. Put the squares in the pan.

Leave a 1-1/2-inch border around the pastry after forking. Use a fork to lightly poke holes.

Coat each pastry with egg white. Put a tablespoon of cream cheese on each square. Place it in the center; it will spread during baking. 

Step 5

Bake pastries for 12–16 minutes until gently browned. Cool pans on wire racks. Serve warm or room temperature.

MAKE GLAZE:  Mix confectioners' sugar, 1 tablespoon milk/cream, and vanilla.

 Small amounts of milk or cream are added until the glaze is thick but pourable. Before serving, glaze the pastries.
