Make Cheesy Leftover Mashed Potato Waffles with potatoes that you have left over. These waffles are both incredibly soft and crunchy at the same time.
INGREDIENTS
– 2 Tablespoons vegetable oil– 1/4 cup buttermilk– 2 large egg– 2 1/2 cups leftover mashed potatoe– 3 Tablespoons chopped scallion– 1 cup shredded cheddar cheese– 1/2 cup all-purpose flour– 1/2 teaspoon baking powder– 1/4 teaspoon baking soda– Sour cream, for serving
INSTRUCTIONS
Pre-heat and spray the waffle baker. Mix oil, buttermilk, and eggs in large bowl. Mix in mashed potatoes, scallions, and cheese. Mix flour, baking powder, and baking soda in a small bowl.
Step 1
Make sure the flour and potato mixture are well mixed.Spread ½ to 2/3 cup of mixture evenly in the prepared waffle baker, depending on its size.
Step 2
(The potato mixture won't expand as much as a waffle, so distribute it evenly.) Close the lid and bake the waffle until golden brown and the egg is cooked thru.
Step 3
Repeat filling and baking the remaining potato mixture and placing the waffle on a platter. Serve potato waffles with sour cream and chopped onions.
