Cheesy Leftover Mashed Potato Waffles Recipe

Make Cheesy Leftover Mashed Potato Waffles with potatoes that you have left over. These waffles are both incredibly soft and crunchy at the same time.

INGREDIENTS

– 2 Tablespoons vegetable oil – 1/4 cup buttermilk – 2 large egg – 2 1/2 cups leftover mashed potatoe – 3 Tablespoons chopped scallion – 1 cup shredded cheddar cheese – 1/2 cup all-purpose flour – 1/2 teaspoon baking powder – 1/4 teaspoon baking soda – Sour cream, for serving

INSTRUCTIONS

Pre-heat and spray the waffle baker. Mix oil, buttermilk, and eggs in large bowl. Mix in mashed potatoes, scallions, and cheese. Mix flour, baking powder, and baking soda in a small bowl. 

Step 1

Make sure the flour and potato mixture are well mixed.Spread ½ to 2/3 cup of mixture evenly in the prepared waffle baker, depending on its size.

Step 2

 (The potato mixture won't expand as much as a waffle, so distribute it evenly.) Close the lid and bake the waffle until golden brown and the egg is cooked thru.

Step 3

Repeat filling and baking the remaining potato mixture and placing the waffle on a platter. Serve potato waffles with sour cream and chopped onions.
