– 3/4 cup (90g) all-purpose flour – 1/2 cup (100g) firmly packed light brown sugar – 1/4 teaspoon baking powder – 1/4 teaspoon baking soda – 1/4 teaspoon ground cinnamon – 1/4 teaspoon salt – 5 tablespoons (70g) unsalted butter, melted and slightly cooled – 1 large egg – 1 cup finely shredded zucchini, well drained – 1/2 to 3/4 cup (85 to 127g) semisweet chocolate chip

Chocolate Chip Zucchini Muffins Recipe

Warm the oven up to 375°F. You can grease the muffin cups or line them with paper liners for 6 regular muffins.

The flour, brown sugar, baking powder, baking soda, cinnamon, and salt should all be mixed together with a whisk.

Make a hole in the middle of the mix. Mix the egg and the cooled butter. Add to the well in the flour mixture and mix just until everything is mixed together.

Add the chocolate chips and veggies and mix them in.

You should use about 3 tablespoons of batter per muffin cup, which is enough to fill each one about 3/4 of the way to the top.

It's done when a pick stuck in the middle comes out clean after 20 to 25 minutes of baking.
