Ingredient

– 1 & 3/4 cup (210g) unbleached all-purpose flour
 – 1 cup (99g) old-fashioned rolled oats
 – 2 Tbsp (25g) firmly packed light brown sugar
 – 1 tsp baking powder – 1/4 tsp salt
 – 1/2 cup (113g) unsalted butter, cold and cut into small cube – 1/2 cup (118ml) milk – 1/4 cup (59ml) honey
 – 1/2 cup (80g) dried currant – 1/4 cup (30g) chopped nuts (optional)

Currant Oat Scones Recipe

Preheat oven to 400°F. Line a baking sheet with silicone or parchment. 

Step 1

Mix flour, oats, brown sugar, baking powder, and salt.

Stir in the butter with a pastry blender or fork until the largest bits are the size of tiny peas.

Stir in milk and honey until a dough forms. Mix currants and nuts gently. 

Step 4

Place 1/4-cup chunks of dough on the preheated pan, leaving 2 inches between each scone.

Bake 12–15 minutes until scones are golden brown.
