Ingredient

– 1 & 3/4 cups (210g) all-purpose flour – 3/4 cup (150g) firmly packed light brown sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1/2 teaspoon salt – Zest of half of a medium orange (about 1 tablespoon) – 1/2 cup (113g) unsalted butter, melted and slightly cooled – 1/2 cup (59ml) milk – 2 large egg – 2 tablespoons fresh orange juice – 3/4 cup (112g) chopped pitted date – 1/2 cup (60g) chopped pecans (or other nut) – Coarse sugar, optional

Date Nut Muffins Recipe

Preheat oven to 400°F. Paper-line or flour-spray a 12-cup muffin pan. 

Step 1

Mix flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, salt, and orange zest in a large basin. Create a central well.

In a separate bowl, mix butter, milk, eggs, and orange juice. Stir into the flour mixture until blended.

Mix with dates and nuts. Keep nuts to top muffins if you prefer. Fill each muffin cup 3/4 filled with 3 teaspoons of batter. 

Step 4

You can top each muffin with conserved nuts and coarse sugar. Bake 16–20 minutes until a pick inserted into the center comes out clean.  

Step 5

Take 10 minutes to cool on a wire rack in the pan. Transfer the muffins to a wire rack to finish cooling.
