Delicious Baked Butternut Squash Tots Recipe

Put down the frozen foods and potatoes and make these Baked Butternut Squash Tots instead. They are a family favorite and are full of healthy vegetables. 

INGREDIENTS

– 1 (3-pound) butternut squash, peeled and cut into 1-inch cube – 2 Tablespoons olive oil – 1/2 cup minced onion – 1/3 cup finely ground breadcrumb – 1 large egg – 1 Tablespoon minced fresh sage

INSTRUCTIONS

Preheat oven to 400°F. Prep a baking sheet with foil and cooking spray. 

Step 1

Pour olive oil over the cubed butternut squash on the baking sheet and mix. Salt and pepper the squash, then roast it for 15 minutes until fork tender yet firm.

Step 2

Process butternut squash in a food processor until roughly pureed. Avoid over processing squash or it will be too loose to shape into tots. Put 3 packed cups in a big bowl. 

Step 3

Mix in minced onions, breadcrumbs, egg, sage, and a touch of salt and pepper. Decrease oven temperature to 350°F.

Step 4

Shape 1- to 2-tablespoon amounts of the mixture into tots using your hands. Place the tots 1/2-inch apart on the prepared baking sheet.

Step 5

Bake the tots for 20 minutes, flip them, and bake for 20–25 minutes until crispy. Serve the tots with ketchup, mustard, ranch dressing, or your favorite dipping sauce after baking.
