Delicious Chewy Chai Molasses Cookies Recipe

Moist, chewy molasses cookies with Chai spices. These flavorful cookies are perfect for a Christmas cookie platter!

INGREDIENTS

Cookie Dough: – 10 tablespoon 140g unsalted butter, softened – 1 cup 220g packed light brown sugar – 1 large egg at room temperature – ¼ cup 60ml fancy (light) molasse – 2 cups 284g all-purpose flour – 1 ¼ teaspoon baking soda – ½ teaspoon salt – 1 teaspoon ground ginger – 1 teaspoon ground cinnamon – ½ teaspoon ground cardamom – ¼ teaspoon ground clove – ⅛ teaspoon ground nutmeg Spiced Sugar for rolling: – ¼ cup 50g granulated sugar – ½ teaspoon cinnamon – ¼ teaspoon cardamom

INSTRUCTIONS

Make cookie dough. For 2 minutes, beat butter and brown sugar in a stand mixer bowl with the paddle attachment on medium speed until smooth, creamy, and fluffy. 

Step 1

You can alternatively use a hand mixer or a wide spatula. Scrape basin edges as needed to mix egg evenly. Add molasses and mix.

Step 2

Whisk flour, baking soda, salt, ginger, cinnamon, cardamom, clove, and nutmeg in a medium basin. 

Step 3

Mix or fold it into the butter mixture on low speed until barely combined. Place the bowl in the fridge for at least an hour.

Step 4

Ready to bake? Preheat oven to 350°F. Parchment two big baking sheets. Make spiced sugar. Blend sugar and spices in a small bowl.

Step 5

Roll heaped tablespoons of dough into smooth balls and cover with sugar. Place on prepared baking sheets with 2 inches between each one (do not flatten). 

Step 6

Bake until evenly browned, puffed, and cracked, 9-11 minutes. Let cookies cool on baking pans for 2 minutes before moving them separately to a wire rack to finish cooling.

Step 7

Refrigerating this dough before rolling and baking makes the cookies thicker and chewier.
