– 2 cups (240g) all-purpose flour – 2 tablespoons (25g) granulated sugar – 2 teaspoons baking powder – 1/4 teaspoon salt – 2 large eggs, lightly beaten – 1 & 1/2 cups (355ml) milk – 2 tablespoons maple syrup – 2 tablespoons (28g) unsalted butter, melted and slightly cooled – 1 teaspoon vanilla extract – toppings: fruit, chocolate chips, nuts, crumbled bacon, etc. – confectioners' sugar, for garnish

Easy Baked Pancake Muffins Recipe

Preheat oven to 350°F. Grease 12 regular muffin cups. Put paper liners in the cups. 

Step 1

Mix flour, sugar, baking powder, and salt. Create a central well. In a separate bowl, mix eggs, milk, maple syrup, butter, and vanilla.

Stir into the flour mixture until blended. Divide batter evenly into muffin cups. Put your favorite toppings on each.

Bake muffins 20–25 minutes until sides are browned and a pick inserted into the center comes out clean.

Cool 10 minutes in the pan. Remove the muffins from the pan to cool or serve immediately.

Sprinkle confectioners' sugar and add maple syrup.
