Easy Gnocchi Chicken Soup Recipe

This quick recipe for Easy Gnocchi Chicken Soup takes a favorite comfort food and gives it a pasta-like twist.

INGREDIENTS

– 1 Tablespoon unsalted butter – 1 Tablespoon minced garlic – 1 1/2 cups diced yellow onion – 3/4 cup diced carrot – 3/4 cup diced celery – 9 cups low sodium chicken broth – 2 medium boneless, skinless chicken breasts, cut into 1-inch cube – 3/4 teaspoon poultry seasoning – 3/4 teaspoon dried thyme – 1 (12-oz.) package refrigerated fresh gnocchi

INSTRUCTIONS

Add butter to a large heavy-bottomed stock pot over medium-low heat. 

Step 1

 After the butter melts, toss in the garlic, onions, carrots, and celery for 3–5 minutes until the onions are translucent. 

Step 2

Stir in chicken broth, raw chicken, poultry spice, and dried thyme. After boiling, lower the soup to a simmer, cover, and cook for 15 minutes.

Step 3

 Add the gnocchi to the pot and cook uncovered for 3 minutes until al dente and floating. Season soup with salt and pepper to taste, then serve.
