Pesto Eggs on Cheesy Toast is a quick and easy recipe that you can make with or without butter.
INGREDIENTS
– 1 slice bread of choice– Unsalted butter– 3 Tablespoons grated Parmesan cheese– 3 Tablespoons homemade or store-bought pesto– 2 large egg– Avocado, olive oil, crushed red pepper, sea salt and pepper, for garnish
INSTRUCTIONS
Cover one side of the bread with butter and press the Parmesan cheese into it.
Step 1
Add bread, cheese side down, to a small skillet over medium heat. Make the bread crispy, golden brown, and melted with cheese. Put the toast aside.
Step 2
Spread pesto evenly in the same skillet. Put the eggs in the skillet and heat until the whites are done and the yolks are done.
Step 3
Add pesto eggs to toast with smashed avocado. Dress with olive oil, crushed red pepper, salt, and pepper, and serve.
