INGREDIENTS
– 1 Tablespoon olive oil– 1 lb. ground pork– 3 cloves garlic, minced– 1 small onion, minced– 1 apple, finely chopped– 1 teaspoon fennel seeds, crushed– 1 teaspoon each chopped fresh sage and thyme– 1 Tablespoon stone ground mustard– 2 eggs, divided– 1/2 cup panko breadcrumb– 1/2 cup grated Parmesan cheese– 1 teaspoon Kosher salt– 3/4 teaspoon black pepper– 1 (17 oz.) package puff pastry (two sheets)
INSTRUCTIONS
Thaw puff pastry on a flour-lined worktop or parchment paper. Start with a 400-degree oven.
Step 1
Heat oil in a big skillet on medium. Sauté apples and onions for 3–4 minutes to soften. Add garlic and cook 30 seconds until aromatic. Remove from heat and cool slightly.
Step 2
Mix pork, onion, Parmesan, panko, mustard, 1 egg, fennel, sage, thyme, salt, and pepper in a bowl. Put it in the fridge while making puff pastry.
Step 3
Roll each puff pastry piece a couple times to remove creases. Cut each sheet in half. Four equal sausage mixture parts should be shaped into a log down the centre of each paper half.
Step 4
Whisk the second egg in a small dish and brush the puff pastry sides with it. Wrap the pastry around the filling and press lightly. Brush the remaining egg on the pastry's edges.
Step 5
Slice each log into 5 equal pieces using a sharp knife. Put the pastry in the fridge for 15 minutes if it's soft or won't cut cleanly.
Step 6
Bake sausage rolls on parchment for 23–25 minutes. Alternatively, oil an air fryer tray and cook at 390 degrees for 7-8 minutes.
