Easy Sourdough Discard Pizza Recipe

A simple, tasty, and easy-to-make sourdough pizza that fits nicely on a standard sheet pan and is topped with your own homemade pizza seasoning.

INGREDIENTS

Dough: – ½ cup + 2 tbsp Warm water 142g – 1 ½ teaspoon Bakers yeast – 3 teaspoon Sugar 12 g – 2 teaspoon Salt 12g – 2 ½ cup All-purpose flour 300g – ⅓ cup Sourdough discard 100g – 1 ¼ tablespoon Olive oil 15g Pizza seasoning: – ½ teaspoon Onion powder – ½ teaspoon Garlic powder – ½ teaspoon Italian seasoning – ½ teaspoon Salt Toppings: – ½-3/4 cup Pizza sauce – ½ cup Shredded cheese – Grated parmesan cheese to taste (optional) – ⅓ cup Spinach chopped (optional) – ¼ cup Red onion optional – ½ cup Italian sausage optional

INSTRUCTIONS

Make the dough:- Stir warm water, sugar, and instant yeast in a stand mixer. Rest for 5 minutes to bloom yeast.

Step 1

Mix the sourdough waste, olive oil, flour, and salt with a dough hook on low speed until a smooth ball forms. Knead the dough in the bowl for 5-10 minutes till it passes the windowpane test.

Step 2

Let rise covered in a warm area for an hour until doubled. Prepare the crust seasoning in a separate bowl and keep aside.

Step 3

Pizza prep and baking;- Preheat oven to 425F. Spread cornmeal on a parchment-lined sheet pan. Remove the proofed dough from the bowl and lay it on the cornmeal-covered sheet pan.

Step 4

 Stretch and spread the dough to your desired thickness on the pan. Since dough puffs, I stretch it thin until it almost reaches the edges!

Step 5

Fork-perforate the dough thoroughly. Rub with olive oil and sprinkle with pizza spice made from onion, garlic, salt, and Italian seasoning.

Step 6

Cover the crust with pizza sauce, leaving margins for crust. Top with cheese and garnishes. Enjoy 15-17 minutes of baking the sheet pan in the open!
