This creative spin on brunch favourites Everything Bagel Eggs Benedict starts with a seasoned bagel!
INGREDIENTS
– 1 recipe hollandaise sauce– 2 everything bagels, halved– 4 slices country ham– 1 avocado, sliced (optional)– 4 egg– Everything bagel seasoning, for serving– Fresh chives, for serving
INSTRUCTIONS
Prepare the hollandaise sauce first. While making the remainder of the benedict, place a bowl or pitcher in a larger bowl of very hot water to keep it warm.
Step 1
Heat a skillet on medium. Turn the ham once to brown both sides. Cover and keep warm on a plate.
Step 2
Start poaching eggs. If you're cooking for a crowd, use the stove top, or microwave for 2-3.
Step 3
Pick a mug or glass bowl with rounded sides to microwave. Fill with 1/2 cup water. Crack one egg into the bowl gently. Add more water if the egg isn't submerged.
Step 4
Put in microwave for 45–55 seconds until egg white is set but centre is soft. Remove with a slotted spoon and drain on paper towels before serving.
Step 5
Toast bagels while cooking eggs. Serve each bagel half with ham, avocado, and a poached egg. Douse with hollandaise. Add Everything Bagel Seasoning and chives. Serve now.
