– 2 cups (240g) all-purpose flour – 1/2 cup (100g) firmly packed light or dark brown sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 2 teaspoons ground ginger – 1 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 2 large egg – 6 tablespoons (85g) unsalted butter, melted and slightly cooled – 1/2 cup (170g) molasse – 1/3 cup (79ml) milk – coarse sugar, optional

Gingerbread Muffins Recipe

Preheat oven to 400°F. Paper-line 12 standard muffin cups. (If not using liners, oil the cups.) 

Step 1

In a large basin, mix flour, brown sugar, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg. Create a central well.

Put the eggs in a separate basin and beat lightly. Stir in butter, molasses, and milk.

Fill the flour well with butter mixture. Mix briefly. Pour 3 teaspoons of batter into each muffin cup to fill them 3/4 full.

Give each muffin a big pinch of coarse sugar on top. Bake 12–15 minutes until a pick inserted into the center comes out clean.

Ten minutes on a wire rack, cool the muffins in the pan. Then remove the muffins from the pan and cool on a wire rack.
