– 4 & 1/2 cups (540g) all-purpose flour, divided – 4 & 1/2 teaspoons (two 0.25-ounce packages) instant yeast – 1/2 cup (100g) granulated sugar – 1 & 1/2 teaspoons salt – 1/2 cup (118ml) water – 1 cup (227g) sour cream – 1/2 cup (113g) unsalted butter – 2 large egg – pastry filling* – confectioners' sugar, for garnish (optional)

Kolaches Recipe

Mix 1 & 1/2 cups (180g) flour, yeast, sugar, and salt in a large basin or stand mixer. In a medium saucepan, combine water, sour cream, and butter.

Stovetop heat until extremely warm (120°–130°F). Add butter mixture to flour mixture slowly. Two minutes of medium-speed beating. Scrape bowl sides.

Add eggs and 120g flour. Beat fast for 2 minutes. Add the remaining 2 cups (240g) flour. Stiff dough.

Cover and chill 2–24 hours. Cover baking sheets with parchment or silicone.

Divide dough into 24 equal pieces. (Your kitchen scale makes this easier and more accurate.) Make balls from each half.

Leave 2 inches between dough balls on prepared pans. Cover and relax 15 minutes. Indent each dough ball deeply and widely. Leave a 1/2-inch border outside.

Fill each indentation with a heaping teaspoon pastry filling. Food-sprayed plastic wrap covers kolaches. Keep the kolaches warm and draft-free until they double in size, about an hour. 

Step 7

Preheat oven to 350°F. Bake kolaches till gently browned, 18–23 minutes. Cool pans on wire racks for 5 minutes.

Cool on a wire rack after removing from the pan. Sprinkle confectioners' sugar on each kolache if desired.
