One Pan Lemon Broccoli Pasta Recipe

Vegetarian Lemon Broccoli Pasta with garlic lemon sauce and grated parmesan cheese is amazing. It's a fast evening meal with fresh lemon juice and zest flavor the whole family will adore.  

INGREDIENTS

– 2tablespoonsextra-virgin olive oil – 1medium shallotfinely diced – 4clovesgarlicminced – 8ounceswhole-wheat or regular farfalle pastaor rotini – 1cupwater – 1 1/2cupslow-sodium vegetable brothor chicken broth – 1cupheavy cream – 1tablespoonlemon zest – 1/2teaspoonsaltor to taste – 1/4teaspoonground black pepper – 10ouncespackage frozen broccoli floretsthawed and roughly chopped To serve: – 1/3cupParmesan cheesegrated – 3teaspoonslemon juiceor more to taste – 1teaspoonlemon zest

INSTRUCTIONS

Add oil to a large saucepan over medium heat. Once hot, whisk in the diced shallot for 2 minutes until soft. Stir in garlic for 30 seconds to aromatic.

Add dry pasta, water, broth, cream, lemon zest, salt, and pepper. Heat the pot covered on high until boiling.
