This simple recipe turns a classic red velvet cake mix into chewy, bright cookies with white chocolate chips that are wonderful for any occasion. Best of all, they just require 4 ingredients!
INGREDIENTS
– 1 (15.25-oz.) box red velvet cake mix (See Kelly’s Note)– 1/2 cup vegetable oil– 2 large egg– 1 1/4 cups white chocolate chip
INSTRUCTIONS
Heat the oven to 350°F. Lay parchment or Silpat on a baking pan.
Step 1
Combine cake mix, oil, and eggs in a stand mixer basin with the paddle attachment. Add chocolate chips. Cover the bowl with plastic wrap and chill the dough for 45 minutes.
Step 2
Before baking, form 2 teaspoons dough into balls. Place cookie dough balls 2 inches apart on baking sheet. Bake the cookies for 10–13 minutes until the sides are slightly crisped and the middle is soft.
Step 3
Cookies bubble during baking but settle after cooling. Check cookies at 12 minutes and bake as needed. Oven temperatures vary.
Step 4
Cool biscuits on baking sheet for 5 minutes before transferring to rack. Repeat with remaining dough, cooling baking sheet between batches.
