INGREDIENTS

– 1 (4- to 5-pound) chicken – 4 Tablespoons unsalted butter – 4 large cloves garlic, minced – 1 lemon, halved – 3 sprigs fresh rosemary

INSTRUCTIONS

Warm the oven up to 450oF and put the rack in the middle.

Step 1

Remove the chicken's giblets and internal fat. Then thoroughly rinse and dry the chicken. Dry chicken skin crisps better. Cook the chicken in a cast iron pot, roast, or bake.

Heat butter and garlic in a small pot on medium-low.  Cover chicken with garlic butter. Salt & pepper chicken inside and exterior. Put rosemary and lemon halves in the hole.
