Are you ready to cook a chicken like a pro? This recipe for Simple Roast Chicken with Garlic and Lemon says to heat up the oven, get the garlic, and coat the chicken.
Warm the oven up to 450oF and put the rack in the middle.
Step 1
Remove the chicken's giblets and internal fat. Then thoroughly rinse and dry the chicken. Dry chicken skin crisps better. Cook the chicken in a cast iron pot, roast, or bake.
Step 2
Heat butter and garlic in a small pot on medium-low. Cover chicken with garlic butter. Salt & pepper chicken inside and exterior. Put rosemary and lemon halves in the hole.
Step 3
Connect legs using kitchen twine. (A simple loop around each leg and tie in the middle works.)
Step 4
Baste the chicken every 15 minutes for an hour by tilting the pan and spooning the juices onto the bird. Continue until internal temperature reaches 165ºF.
Step 5
(Set the meat thermometer into the breast without touching the bone for the most accurate reading.) Flip the pan every time you baste the chicken to cook it evenly
Step 6
Remove the chicken from the oven and place on a chopping board. Rest the chicken for 10 minutes before chopping and serving.
