This Slow Cooker Balsamic Honey Pulled Pork dish uses soft pork shoulder slow-cooked with balsamic, honey, garlic, onions, and my secret ingredient, blackberry jam.
INGREDIENTS
– 1 (2 1/2- to 3-pound) boneless pork shoulder– 1/2 cup honey– 1/2 cup balsamic vinegar– 1/4 cup blackberry jam – 1/4 cup hoisin sauce– 1/2 cup chicken broth– 3 cloves garlic, minced– 1/2 cup diced onion– 1 Tablespoon cornstarch– 1 recipe Asian Slaw or store-bought coleslaw– 12 slider-sized buns or roll
INSTRUCTIONS
Take off any extra fat from the pork shoulder and put it in the slow cooker.
Step 1
In a medium bowl, combine honey, balsamic vinegar, jam, hoisin, chicken broth, garlic, and onion. Pour over pork shoulder. Cook the pork shoulder on LOW for 8–9 hours until done.
Step 2
Remove the pork shoulder from the slow cooker with tongs, retaining the liquids, and set on a chopping board. Shred pork shoulder with two forks. Put jerked pork in a big bowl.
Step 3
Mix cornstarch and 3 tablespoons cold water in a small bowl to produce a slurry. Add the slow cooker liquids to a medium saucepan over medium-high heat and whisk in the slurry.
Step 4
Boil the sauce for 3 minutes to reduce and thicken. Add sauce to pulled pork and toss. Halve buns. Serve pulled pork on buns with Asian Slaw and serve immediately.
