Slow Cooker Pork Roast Recipe

This simple but tasty pork roast recipe makes the easiest one-pot meal. It has fresh vegetables and a rich broth for a cozy full meal.

– ▢1 (2.5 to 3- pound) boneless pork butt roast – ▢Sea salt and pepper – ▢2 Tbsp avocado oil – ▢1 large yellow onion, sliced – ▢1.5 lbs potatoes I use baby gold potatoe – ▢3 large carrots, chopped into large chunk – ▢8 ounces mushrooms, chopped, optional – ▢5 cloves garlic, minced – ▢3 sprigs fresh thyme – ▢3 cups beef broth – ▢1 cup red wine, optional

Unpack the pork roast and place it on a chopping board or large plate. If the roast has netting, remove and discard.

Press paper towels on the roast to remove excess liquid. Season the roast with sea salt and pepper.

Heat avocado oil in a large cast iron skillet over medium-high heat. After the oil sizzles for a few minutes, carefully set the seasoned pork roast on it.

Sear for 6 minutes, flip, and sear for 3–6 more minutes until both sides are golden brown.

Add all ingredients to the bottom of the crock pot and stir well while the meat browns in the skillet. Move vegetables to make room for the browned meat in the crock pot.

Cover the slow cooker and cook on high for 5–6 hours or low for 8–10 hours until the pork roast is fork tender.

Move the slow-cooker roast to a chopping board. Shred the roast into shredded pork with two forks or cut it into bits for serving with a sharp knife.

Pork roast with crock pot juices and veggies! To absorb liquids, serve over brown rice, noodles, mashed potatoes, or crusty bread. Great gravy may be made from crock pot liquids.
